
This is my version of the kale salad at Herbivore in San Francisco. I remember eating kale when I was younger, but we didn't call it kale. It was referred to as, "Hey, that's the garnish! You're not supposed to eat that!" Well, many years later, kale is one of my favorite foods. Nutritionally speaking, it is one of the most nutrient dense foods out there. It is a good source for vitamins A, C, and K, fiber, iron, and calcium. Pound for pound, it is also a good source for protein! Not too shabby for a garnish.
Herbivore Salad
- Kale
- Avocado
- Ground flax seeds
- Cherry tomatoes
- Cucumber
- Morningstar Chik'n Strips, browned
- Raw sunflower seeds
- Shredded carrots
- Dried cranberries
Tear the kale into small pieces and place into a bowl. Add the avocado and flax seeds to the bowl. Using your hands, squeeze the avocado and kale together to create a creamy dressing. Add the rest of the ingredients and mix.
