Post-Run Breakfast

I've been wanting to make this for awhile, and today was the perfect day to do it. I got up early to get in a run before going to a physics lab. When I got home, I had just enough time and all of the ingredients to make this.

Breakfast Sandwich
  • Two slices of peanut butter toast. For true authenticity, I suggest you use the kind of hippie bread that I used here. It has oats, flax seed, walnuts, almonds, hazelnuts, and pecans.
  • Thin slice of firm tofu
  • Spinach
  • Turmeric

Sprinkle the turmeric onto the tofu, and heat the tofu in a pan with a little bit of oil. Put a layer of spinach on the toast. Place the tofu on top, and put the other piece of toast on that. Done, or as a friend of mine says, easy peasy.
